I say Merry Christmas NOT Happy Holidays!!!


Gonna be a white Christmas! I am so excited right now they are calling for snow on Christmas day but only 40-50% so we will see what happens!

I ventured out to the food trucks on Saturday with cousin Kim but we decided to eat at COSI instead. There was only two food trucks where we were a cupcake food truck and some other one that has tex-mex food.
The cupcakes looked so good but they ain't no Georgetown cupcakes!! I am so addicted to that place. Cousin Kim was in town this past weekend so we went to Georgetown and got a cupcake and the free cupcake! I had peppermint white chocolate and salted chocolate caramel... A- Mazing!! They have this special where they list the flavor of the day on facebook and if you get there as one of the first 100 customers you get the free flavor!! So me and Kim got it 2 days in a row! We got chocolate salted caramel and strawberry lava fudge.

So last year they started filming a tv show on TLC called DC Cupcakes. When we went to it on Sunday they were filming on the show and the girl said one short caramel latte and I said, " That's me!" and the guy pointed the camera right at me! So I will let you know when they air the Christmas episode. I doubt I will be on tv but it was thrilling to maybe have 5 seconds of fame.


Recently we joined our church in Alexandria, Va. Ever since it has been a big blessing, three days after we joined we won a 42" plasma tv and home theater system! So we have been enjoying that, we put it in our room and I love it. I tried out a new recipe on Sunday that is the best cookies ever! I got them from our neighbor in Texas.

Jessica's Marshmallow Clouds Recipe

Ingredients
3 cAll-purpose flour
2/3 cUnsweetened cocoa powder
1/2 tsBaking soda
1 cWhite sugar
1 cLight brown sugar (packed)
1 cSalted butter (softened)
2 lgEggs
2 tsPure vanilla extract
2 cMini semisweet choco chips
8 ozMini marshmallows*
Instructions
* This recipe slightly modified from the original as noted.

1.Preheat oven to 325 (was: 400) degrees F. (was: Until you are ready to assemble the cookies just prior to baking, keep the marshmallows in the freezer--otherwise they will thaw too rapidly -- changed to: Use fresh marshmallows ONLY).

2.In medium bown combine flour, cocoa and baking soda. Set aside.

3.Combine sugars in a large bowl. Using an electric mixer, blend in butter, scraping down the sides of the bowl. Add eggs and vanilla, and beat at medium speed until light and fluffy.

4.Add the flour mixture and chocolate chips, and blend at low speed until combined. Batter will be very stiff.

5.Gather 4-5 (was: frozen) marshmallows in the palm of your hand and cover them with a heaping tablespoonful of dough. Wrap the dough around the marshmallows, completely encasing them and forming a 2-inch-diameter dough ball.

6.Place balls on ungreased baking sheets, 2 inches apart. Bake 15 (was 20-22) minutes. Cool on pan 2 minutes, then transfer to a cool, flat surface.

Try them and let me know how they turn out, sometimes they can be a little messy, and make sure you cover the entire marshmallows or else they will leak out when baking. I could eat the entire batch so make sure you are not hungry when you make them. I am trying to bake more, I can always pass things off to my hubby to take to work.

I am so excited for Christmas, my parents are coming and it will be great to have family here since we are so far away from everyone else. Family is so important and I am learning that more and more as I grow up. It is not about the little things and being stressed out about them. It is about building each other up and being there for people and loving on them. I hate to see things happen in a family that brings them down. Can't everyone just get together and have fun and enjoy the moment? Remember the reason why we have Christmas, to praise and glorify Jesus and celebrate the birth of our savior. I am so thankful to have the love of Him in my heart. Merry Christmas everyone take time to really love those around you!
